a must-try seafood recipe

We were out almost this entire long weekend. That’s right, to eat and shop, then eat some more.

My kids are picky eaters so I usually let them choose their favorite foods. Guess it’s my own fault that I sometimes don’t get to eat my own favorite foods as often as I’d like to, especially when I’m craving for some.

I’ve been craving a nice fish fillet this weekend but my kids don’t quite care for it. So when I went groceries this morning and saw a juicy fish fillet, I grabbed it.

I’ve got just the perfect recipe for Pan Roasted Glazed Rockfish with Peas and Carrots by Chef Tafari Campbell of Maryland. This recipe is one of the 5 contest finalists in the Great American Seafood cook off.

I couldn’t find rockfish fillet at my regular grocer’s so I’ll be using fresh dory instead. I prefer fresh local seafood because it tastes so much better and is definitely more nutritious.

I love that the recipe includes fresh shrimp, carrots, and a taco (gotta have my carbs and eat ‘em too :lol: ). I’m not such a big fan of peas so I guess I’ll substitute the peas and pea puree with broccoli flowrets and diced tomatoes.
